Bajan(Cod)Fish Balls and Dip

3 Medium Chopped Onions
2 Lbs Boiled and drained Salted Cod Fish
Fresh Thyme
Fresh Sweet Marjoram
Freshly Minced Red Hot Pepper (to taste)
Freshly Chopped Parsley
1 Cup Chives, Chopped(seasoning)
2 Lbs Flour
12 tsp baking powder
water (to mix batter to a dropping consistency)


Place salted cod fish in a pot of boiling water and allow it to boil. This process will cook the cod and remove some of the excess salt. Add twigs of fresh herb to the boiling cod to add flavor.

Take the boiled salted cod fish and place it in a food processor together with chopped onions and process.

Mix together shredded salted cod fish, fresh herbs of thyme, sweet marjoram,finely chopped chives, fresh parsley, freshly minced hot red peppers and finely chopped onions. Add flour, baking powder and water to cod fish mixture. Mix well and set aside to rest. Set deep frying pan on stove, add oil and allow it to heat up.

Using a teaspoon, carefully drop spoonfuls of batter into hot oil and deep fry.

Place the fish cakes directly into a colander and allow any excess oil to drain.

Note: Store the extra batter and freeze. Batter has a shelf life of 3 months in the freezer.

Dipping sauce: Easy to make dip all it takes is mayonnaise, tomato ketchup and hot pepper sauce. Whisk together, mix well.
