I had a very similar situation with my ex. I suggest a numbing spray for her mouth and throat. Also, if it's the flavor she doesn't like, try drinking/eating more fruit and fruit juices, especially pineapple juice. It adds more fructose to semen which will make it taste sweeter.
It's really tricky to get a girl better at giving head. I told her to do what I do when I go down on her: watch the reactions and body movements of the person you're doing it to and adjust your style to make them squirm and moan. If I like it when you go faster, go faster. If I like it when you lick it slowly and look me in the eyes, do that! It got her better quickly.
